Sunday dinner

The recipe for todays dinner has been given and served to me by Martin (my daughters boyfriend)

Risoni risotto

  • 4 dl Risoni
  • 8 dl vegetable stock
  • 1 dl olive oil
  • 2 dl cooking wine
  • salt,pepper, chili flakes
  • parsley
  • 4 dl butter fried mushrooms
  • slice of St Agur cheese

Heat olive oil, garlic, chili flakes on medium heat in a medium-sized saucepan. Put in the risoni, stir all the time.  Stir until the risoni is covered in oil. Start pouring in the vegetable stock 2 dl at  a time. Stir. Let it soak in. Keep adding the vegetable stock and stir. Add the wine is small quantities. When you have used all the stock, add mushrooms, parsley and St Agur cheese.  Please do not rush the heat, keep  the same level during whole process. You can add any kind of cheese or vegetables into this dish. Experiment. Good luck and enjoy.

I served filé of veal with the meat thermometer  showing at 70 °C  and butter fried asparagus with roasted pine nuts.

Went down very well and much appreciated by the whole family.
