Annas Fishsoup with saffron

Today Carl Johan said “Can we have your fish soup for dinner, Mum”. The whole family loves this soup and its so easy and quick.

Annas Fish soup with saffron (approx 4 -6 pers)

  • 400 gr salmon filé
  • 200 gr wolf fish or monkish
  • 1 net of mussels in shell (500 gr )
  • 1 pkt saffron
  • 1 red pepper
  • 1 yellow pepper
  • 5 dl cream
  • 1/2 small fresh fennel
  • salt/pepper/
  • 1 tsbsp of tomato puré
  • 2 garlic gloves
  • 1 liter of fish stock
  • 1 small leek
  • 1 tpsp olive oil
  • 3 dl white cooking wine

Slice the fennel, peppers, garlic and leek. Fry the tomato pure with chiliflakes in the olive oil. Add the sliced vegetables. Pour the wine, fish stock. Leave to boil for 10 minutes. Add the cream and saffron. Simmer for about 20 minutes. Add salt/pepper.

Cut the fish into small portions and wash the fresh mussels. When you are ready to eat add the fish and mussels. Stir very carefully. Bring to the boil. Turn the heat to low and leave for about 5 – 7 minutes. Once again stir carefully. Serve with nice bread and home-made aioli. Good Luck and enjoy.
