Christmas – Gingerbread sponge cake

This is a must to bake for christmas. Its flavours are fantastic.

Gingerbread sponge cake

  • 100 gr butter
  • 2 eggs
  • 1 1/2 dl castor sugar
  • 1 1/2 dl yoghurt
  • 1 dl cranberries jam (lingonsylt)
  • 1 tsp sodium bicarbonate
  • 3 1/2 dl plain white  flour
  • 1 1/2 tsp of, ginger powder, cardamom powder, clove powder
  • 2 tsp of cinnamon

Turn the oven to 200º. Melt the butter and leave to cool. Beat sugar and eggs until white and fluffy. Add the butter, yoghurt, spices and cranberries. Fold the flour together with the sodium.  Place in the middle of the oven for approx 40 min. Enjoy.
